Whoopie Pies-S'more Style

As I shared with you in my last post, I was attacked by a metal shard via my dinner a few nights ago.  I saw my dentist this morning, and the metal did in fact gash my gums.  Brutal!!  An X-ray showed no remnants remaining, so hopefully in a few days all will be healed up.  I'm so not eager to dine out any time soon!  Instead you know where I'll be...my kitchen.

What's cooking these days?  Good stuff, S'more Whoopie Pies!  Here's an example of one of the many things I love about blogging.  You fun readers keep sending me recipes!!  I've got Rachael Ray recipes and more all piled up in my inbox just waiting to be cooked, baked, devoured, what have you.  Last week alone, I got 2 recipes just about s'mores.  You good, good people know I LOVE s'mores! 

S'more Whoopie Pies
Prior to this recipe, I had never ventured into the world of "whoopie pies."  As far as I can recall, I've never even eaten one!  So this was quite the adventure!

 First I made a batch of brownies (with the Hershey's syrup packet).  You were supposed to spread the batter out thinly onto parchment paper placed in cookie sheets with edges.  As you know, I'm lacking in the bakeware department, so I used the bottom of 2 roaster pans.  You know, the kind that come standard with an oven.  Classy, right?  Resourceful, I say!

Once the brownies are baked, you are supposed to cut out circles of brownies with a 2 inch circular cookie cutter.  Here's a big surprise...I don't have one of those either.  Anyone feeling a tad sorry for me yet?

 Maybe a little, right?  These are my only non-holiday cookie cutters: Mickey Mouse and the great state of Texas.
 Once again, I had to be resourceful.  I turned a wine glass upside down, and what do you know...it worked!

 I made my little brownie rounds.  When I was done, I reached for the Hershey's S'more's icing and went to town!  I generously dolloped those little brownie rounds with plenty of s'mores flavored icing!

 When I was done, I put a second brownie round on top, and there you go.  I made my first batch of whoopie pies!  While they were certainly a divine way to eat some chocolate, I think this s'mores lover missed the graham cracker aspect of the s'more.  If I made these again, I would probably sprinkle some graham cracker crumbs onto the icing dollop and see what that brings me.

What if one side's a brownie;
and the other side's a Graham cracker?
That would give you the best of both worlds.
