Lemon Caper Scallops


I've got very little to share with you today, besides a yummy recipe.  I'm off to get the little princesses from preschool in a few minutes, but before I go...I must share this...


It's Rach's Lemon Caper Scallops!  If you find yourself clueless about what you want to make for dinner tonight, I would highly recommend this.  It takes under 10 minutes!  That's prepping and cooking.  Does it get better than that?  Why yes, yes it does.  This meal is also tasty!  Think of what Lemon Caper Scallops would cost you in a restaurant, and treat yourself to a MUCH cheaper home made version.  

I was originally going to serve this on top of some couscous, but I was running short on time, and BIG on hunger one day, so I served the scallops over a bed of spring mix greens.  I used the sauce and the flavor in lieu of salad dressing.
