I fall into that weird category of people who don't LOVE peanut butter. I actually refused to eat it until a few years ago (with the exception of Reese's cups). My sweet mom made me jelly sandwiches instead of peanut butter and jelly ones as a kid. Yes, I realize this lacks protein, but I LOVED them. I didn't understand why on earth people were yucking up their sandwiches with icky ol' peanut butter.
What I do understand, is that most people LOVE their PB&Js!
While I have come around in the peanut butter department to at least liking it, I have yet to achieve LOVE status when it comes to PB.
With my peanut butter confession out there on the table, I can now tell you about today's treat from Rach and Me. Today's recipe is Rachael Ray's Nutty Peanut Butter & Jelly Squares, and by golly if it doesn't taste just like a peanut butter and jelly sandwich turned into a cookie bar!
In full disclosure, since this is confession time, I didn't make these. My foodie friend, and peanut butter lover, M did. She served them to us a few weeks ago when we were hanging out at her house.
I can say that these were tasty cookie bars. If you have a PB&J lover in your house, then this could be their new favorite dessert bar. It is not very sweet, which I think is its greatest strength. Due to its mild sweetness, you could quickly find yourself pounding down 3 cookie bars and not even notice it. Although, don't feel guilty if you do. I like to think of these as guilt free-ish. I mean I am getting protein, right? Isn't that what Dr. Oz would want?
